This is really another of those where you should feel free to take liberties all over the place. Change, swap, adapt. If it helps you (it did me), then start by following a recipe but as you gain confidence and love for the food you're eating then swap and change whatever you like.
I was planning to make this with avocado on our retreat, but we ran out, and someone suggested the red pepper, which added a lovely tastiness to it. We also added courgette which has a lovely creamy texture too. Pretty sure I forgot to put the garlic in, but it makes such a good kick to it, then add it if you like or leave out if you prefer. Probably not the best dish to eat if you're about to go out on a first date - or at least leave out the garlic then, but as a boost for a cold, then double up on those garlic cloves!
So to get on with the recipe...
Spiralise the courgette - I like to have at least 1 and 1/2-2 per person
Chop the veg - we used celery, peppers, spring onion and cherry tomatoes but help yourself to the contents of your fridge and chop away :)
Add the vegetables to a plate
Sauce (will make for 2-4 people depending how hungry you are!):
1 cup cashew
1/2 red pepper
1 courgette
Juice of 1 lemon - approx 2tbsp
2 garlic cloves
3/4 cup water (more if like more watery and less if you like thicker sauces)
Pinch of sea salt - optional
Blend in blender (if using a lower powered blender - and you should anyway - soak the cashew nuts, either overnight in cold water or for 20 minutes in hot water).
Pour sauce over the vegetables and enjoy.
